The Giarraffa olive is a traditional Sicilian olive variety, highly valued for the production of premium table olives. We process the olives only when they reach full black ripeness, the stage at which they develop their finest organoleptic characteristics, rich flavour, and meaty texture. The natural maturation process is slow and carefully controlled: the olives are preserved in brine inside large tanks for approximately one year. Once the ideal level of maturation is achieved, they are processed in an artisanal way to enhance their natural sweetness and distinctive Mediterranean aroma. Finally, our organic black Giarraffa olives are seasoned with extra virgin olive oil, oregano, and a touch of white wine vinegar, creating an authentic Sicilian gourmet delicacy.
