This tomato sauce is obtained by Sicilian tomato varieties. We use an ecotype of San Marzano tomato selected and grown in Sicily and Datterino tomato recognized for its sweetness and density which enriches our sauce.

Food pairing: It is a basis for preparing several dishes, the main seasoning for pasta al pomodoro, a simple dish that represents the tastiness of the Mediterranean kitchen.
Shelf life: 24 months from production date.
How to store: store at room temperature, after opening keep refrigerated and consume within three days.

The sun-dried tomato cream belongs to the popular traditions of South Italy. The harvested tomatoes are cut in half, stretched out on wooden boards and salted. Afterwards they are placed under the summer sun, in a few days they get dried and then they are stored in baskets in the dark. Subsequently they are desalted by blanching, once they have reached the right degree of salt they are shredded into a cream seasoned with the Mediterranean aromas and extra virgin olive oil.
